Worse, the grounds for endless mi- graines to mutilated genes are coffee s fault. For the simple reason that although coffee is a legume eveh at war with itself (instant toffee is one of the richest fod sources of magnesium and supplies good levels of the B Vitamin niacin, as well). the caffeine in coffee. -makes it -a narcotic, the chlorogenic acid in it makes it a dangerous drjg and the over roasting of the bean and the nitrosamines ifcontains make it a potent co- arcinogen. Caffeine is a member of the same alkaloid chemical group - as morphine, nicotine, cocaine and strychnine - all having addictive propprties. So with daily use we. develop a- tolerance to the stimulation. Our glands loge their ability to act naturally. So we need the stimulation. Some studies have revealed that heavy consumption of coffee can reduce a persons vitamin B1 leyel by as much as sixty percent. When people have a vitamin Bl deficiency - they become tired, nervous... . they have a general malaise, aches and pains, particularly at night. This progresses to a kind of tingling in the legs, the feet - then it goes on to cardiovascular disturbances. Even if it s decafeinated, coffee still belongs on your endangered libations list. As a matter of fact, you may be running an even greater risk if your cup runneth over with decaffeinated coffee because it -is bound to be abrim with trichloroethylene, which NY Times reporter Jane Brody describes thusly: The chemi- cal trichloroethylene is a close relative to the plastics chemi- cal vinyl chloride, that was found a year ago to cause a rare type of liver cancer in exposed workers. Trichloroe- thylene, more than six hund- red million pounds of which are produced in the US each year, is mainly used as a degreasing agent in the metal industry and as a solvent and dry cleaning agent in the clothing industry. It is also wused as an anesthetic in minor operations and -te- extract substances from certain foods, such as to remove caffeine to produce decaffeinated coffee and to isolate spice resins. And it is not just the caffeine alone that gives our little brown mug so many black marks. In many studies, it was another constituent, chlorogenic acid, that caused the trouble. What trouble? Anything says psychiatrist John F. Greden, MD at the University of Michigan Cent- er in Ann Arbor, who has examined the phenomena of Caffeinism extensively, from nervousness, irritabi- lity, agitation, headache, rap- id breathing, twitching, in- somnia, and even ringing in the ears and flashes of light. He says, the syndrome of caffeinism reads like a classic description of an anxiety attack . , Caffeine sometimes has paradoxical effects. In some people it may cause a headache; in others it may relieve one. In some it raises the amount of sugar in the blood; in others it lowers it (and may consequently stimu- late hunger pangs or rarely a hypoglycemic reaction - a dizzy, weak, nauseated, head- acy, irritable feeling). And if coffee giveth get-up and go to so many millions it also. taketh away with a vengeance. Coffee drinking wacks away large amounts of all the water-soluble vitamins and that includes the entire B energy complex, plus the metabolite, . ascorbic acid which you need simply to handle the very stress that coffee drinking causes in the first place. Furthering? the case for unplugged percolator is the news from Alberto Donadio- secretary of the Columbian Committee for'Environmental Information - that the deadly pesticides Aldrin, Dieldrin, Chlordane, and. Heptachlor (all of which were banned in the US in 1976) are regularly and heavily used on Columb- ian coffee plants, and have been for twenty years. And maybe you can t get blood out of a turnip but you can get a darn good non-nar- cotic brew out of anything from a dandelion root to a soybeah, carrof or an herb Coffee ... caution such as burdock. (Just roast em and grind em and perk em). Or lift the lid on your early morning or ,evening lethargy with stimulating herbs like ginseng, ginger, gola kola or cayenne or make chick pea coffee. Roast garbanzos for 30 minutes in a 500 degree oven until the beans become very dry and very dark brown. Run the pellets through your flour mill, coffee grinder or what- ever (be sure they're ground coarsely like a coffee). To six cups boiling water add one ounce (1 tbsp) garbanzo bean grounds and continue the boiling for about three min- utes (it looks like coffee). Then add two tablespoons of regular grind coffee. Let the mixture cool for about five minutes. Add a dab of honey. Mock Mocha Java (cereal-based) Mix well two- quarts of wheat bran and, one pint yellow cornmeal. Add three - well-beaten eggs and one cup of sorghum molasses. Beat well, spread on a pan, and heat in ovefi to dry. Use great care to stir often while the concoction is browning - this is the secret to good coffee. A handful is sufficient for two persons. Sweet cream improv- es the flavour of the brew, but this is a matter of taste.
