It is called Maple Chicken - 4 1/2 lbs (2kg) Chicken pieces (for company just buy breasts, thighs and drumsticks - for a less expen- sive dish, cut up one whole a 2 chicken); 1/2 cup (123 ml) All- purpose flour; 1 teaspoon (5 ml) Salt; freshly ground pepper; 3 tablespoons (50 ml) Vegetable Oil; 1 pound (600 g) Cocktail Sausage; one Spanish Onion, sliced and separated in rings; 1/4 cup (50 ml) Butter; 1/2 cup (125 ml) Water; 1/2 cup (125 - ml) Maple Syrup. Shake chicken in flour sea- soned with salt and pepper to taste. In a large skillet, heat two tablespoons (25 ml) of the oil over medium heat and brown sausage light (do not cook through). Remove with slotted spoon, and re- serve. Add onion rings to pan with two tablspoons (25 ml) of the butter; saute until golden brown. Reserve.
